Our Chocolate Mousse is one of the most labor intensive pieces of candy that we make. For over a decade now, I’ve been directly involved in each of the steps it takes to put the finished product on the shelves. Whether I’m cooking, extruding or filling each piece with fresh vanilla crème, every time we make a batch of chocolate mousse I am reminded of how many steps it takes to produce these beautiful looking chocolates.
Lately I've been thinking of a creative way to show how this concoction is made. Well, last week we had a little fun and took some time lapsed photography of our chocolate mousse production. I created a short video that hopefully gives our customers an inside look at the process. In all, it takes two cooks to make a batch, four people to extrude the chocolate centers, one person to put the centers on the enrober, two people to fill the centers with fresh vanilla crème, one person to mark each piece, and two people to take the pieces off the enrober. From raw material to finished product 13 people are involved in producing a single batch of our chocolate mousse!
