How to Keep Your Josh Early Chocolates as Fresh as the Day You Bought Them

We go to great lengths at Josh Early to provide you with the freshest, most pure chocolates possible. That's why we NEVER use any preservatives, we never refrigerate or freeze our chocolates, and we encourage all of our employees to taste test our products on a regular basis as an added form of quality control (one of the benefits of working for a chocolate company!).

So, when you buy chocolates from Josh Early, you know you are getting the freshest chocolates possible. But once you take the chocolate home, how can you ensure the freshness lasts? Here are five ways to take proper care of your chocolate:

  1. Store your chocolate in a cool, dry place: 50 degrees F, less than 50% humidity.
  2. Keep it out of direct sunlight.
  3. Make sure to avoid storing it with other foods, as chocolate will quickly absorb other odors.
  4. Eat your chocolates within one to two weeks of purchasing. Wait too long and you might discover what's called chocolate bloom: a natural reaction that occurs with all chocolate over a period of time when the cocoa butter within the chocolate comes to the surface, giving the appearance of a white/grey haze on the chocolate.
  5. Avoid refrigeration and freezing your chocolate: the change in temperatures will negatively effect the temper of the chocolate, compromising the taste, texture and mouth feel.
