How to make White Chocolate Macadamia Nut Cookies

With the holiday baking season ramping up, we at Josh Early Candies thought it would be fun to share another cookie recipe with you. This recipe represents our take on a classic favorite that’s sure to be the star of all of your cookie swap events this Christmas.

Our White Chocolate Macadamia Nut Cookies feature our White Chocolate Break-Up ($3.95), as well as our Macadamia Nuts ($12.25) that we roast fresh and lightly salt in our Josh Early kitchen. The cookies’ delicate brown sugar flavor allows the smooth richness of the white chocolate to shine through, while the macadamia nuts add a decadent and satisfying crunch.


White Chocolate Macadamia Nut Cookies
Makes about 3 dozen cookies


  • 1/2 pound (2 sticks) unsalted butter, room temperature
  • 3/4 cup sugar
  • 3/4 cup dark brown sugar
  • 2 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup White Chocolate Break-Up, chopped
  • 1 cup Macadamia Nuts, chopped


1.       Preheat the oven to 375˚F.

2.       Using a stand-mixer, cream together the butter, sugar, and brown sugar. Add the eggs, one at a time, and beat until well-blended.

3.       Mix the flour, baking soda, and salt together in a large bowl. Add the dry ingredients to the dough and beat until incorporated.

4.       With the mixer still running, add the vanilla and mix for an additional 10-15 seconds.

5.       Remove the bowl from the stand-mixer. Using a rubber spatula, fold the chopped White- Chocolate Break-Up and Macadamia Nuts into the dough until the pieces are evenly distributed.


6.       Drop tablespoon-size mounds of dough onto baking sheets lined with Silpat or parchment paper.

7.       Bake until the cookies are lightly browned on the edges, about 10-12 minutes.

8.       Cool for 2 minutes on the baking sheets before using a spatula to transfer the cookies to a wire rack to finish cooling. The cookies may be store for up to 3 days in an air-tight container.

Serve these cookies warm with a glass of cold milk for dunking, then sit back and watch the smiles appear on your loved ones’ faces.
