Making Peppermint Bark for the Holidays

For the past several weeks, we've been hard at work in the Josh Early Candies kitchen. Not only have we been stepping up our candy production for our busy holiday season, but we’ve also been developing a brand new product that we’re extremely excited about – our Peppermint Bark!

To celebrate its debut in our Christmas candy lineup, we thought it would be fun to give you a behind-the-scenes look at exactly what goes into making it.

We start with our premium semisweet dark chocolate and our buttery white chocolate that’s been infused with natural peppermint oil.  After the chocolate has been melted down in our large copper pots, we pour some out onto our marble work tables.

Moving with skill and precision, our confectioners use metal spatulas to temper or seed the chocolate by moving it over the table. This extremely important process helps gives the Peppermint Bark ($9.95) its appealing shine and satisfying crunch.


When the chocolate has reached the desired consistency, we add it back to the chocolate still in the copper pots and give everything a vigorous stir to ensure that there aren’t any lumps or solid pieces left.

Now it’s time to bring all of the Peppermint Bark components together!


First, we create the base layer of dark chocolate by pouring the chocolate onto a table lined with paper and edged with metal rods. Then we smooth out the chocolate until the layer is nice and even.

The dark chocolate is allowed to set for a few minutes before we add on the top layer of white chocolate.


Then, before the white chocolate layer has had a chance to completely set, we top the Peppermint Bark with a sprinkling of crisp peppermint candy bits.

After about 20 minutes or so, we’re ready to score each sheet of Peppermint Bark into pieces so the candy will be easier to break up and place in our Josh Early Candies boxes.


But before the Peppermint Bark can be boxed, it must be carefully removed from the work tables, transferred to wooden trays, and carried out to the packing station at the front of our workroom.

At the packing station, our staff members gently break the Peppermint Bark into pieces and place them into our Josh Early Candies boxes until each box weighs 9.5 ounces. 


Then each box is given a lid and adorned by a festive red ribbon before being put out in our showroom for you all to buy, bring home, and enjoy.
