Show Mom You Care with Our Chocolate-Covered Strawberries

While it’s typical to hear us talk about our Chocolate-Covered Strawberries in the weeks leading up to Valentine’s Day, there’s also a time each spring when we organize a limited production of the decadent delicacies in order to honor a very special group of people – mothers. We can’t think of a better way to show Mom you care this Mother’s Day than by giving her a box of these strawberries, made fresh daily in our Allentown store.

To show you the love and the care that goes into our Chocolate-Covered Strawberries, we thought we’d give you some insight into the production process.


To start, our strawberries are sourced from a local, family-run business. Partnering with another company in the Lehigh Valley allows us to actually preview the berries to guarantee that they are the freshest available.

 

For Mother’s Day, we cover our strawberries in our perfectly tempered Milk Chocolate and then decorate them with a drizzle of Dark Chocolate. By tempering the chocolate, we ensure that the final product will be aromatic and aesthetically pleasing. The chocolate will be hard and will have a good snap when you bite into it, but then it will simply melt in your mouth and feel like silk on your tongue.


The leaves of the strawberries are fluffed up gently to give us something to hold onto when dipping the fruit into the chocolate.



After a solid dunking, the excess chocolate is allowed to drip off the strawberries, which are then held against the chamber of the tempering machine to stop the flow of chocolate and to create a smooth edge.


The strawberries are then laid on a tray lined with waxed paper. Do you see the shine of the still-wet chocolate? That’s all due to bringing it to a perfect temper. You can see that it really does make a difference in the final appearance of our Chocolate-Covered Strawberries!


Once on the tray, the leaves of the each strawberry are fanned out again, giving the berries a more natural look. The fruit is allowed to rest for a few minutes to let the chocolate set. While it would be perfectly acceptable to box up the strawberries and give them as a gift “as is”, we think they deserve some extra love, just like Mom.

To decorate the strawberries, we dip a drizzling fork into our tempered Dark Chocolate and then quickly wave it back-and-forth over the fruit. 


We’d like to think that this is what Jackson Pollack would have created had he worked in chocolate rather than in paint. 


Once the drizzled chocolate has had a chance to set, the tray of strawberries is brought out into the store and placed in the display case. In just a couple of hours, our fresh Hand-Dipped Chocolate-Covered Strawberries are ready to be wrapped and brought home for Mom. 


When you tell us that you’d like a box of our Chocolate-Covered Strawberries, we carefully hand-select the fruit and place each piece gently in one of our square boxes.

 

 As we fill the box, we weigh it to make sure you get a full pound of strawberries.


 


 


We finish the presentation with a specially designed lid and a delicately tied pink bow. Pure pink perfection!
